
We often supply hurting nations and hungry people with rice casserole meals. While you may know the term, did you know that each serving is a complete, specially formulated meal that includes a proper balance of nutrients and vitamins to encourage good health and growth? Why is this so important? In discussing his efforts in Zambia, Dave Keating, president of Creator's Touch Ministries, explains:
By far, the most important product that we have distributed to these children is the rice casserole meals…. Most of these children receive only one meal a day and any food served at home is at best, a "tummy filler." The mainstay of
Zambian food consists of enchima (a maize corn porridge) and some sauce or little vegetable and at times a very small piece of chicken. They do not receive the necessary vitamins or daily nutrients. This is apparent in the weakness of the children and lack of attention in these children at school. After serving the rice casserole meals to schoolchildren over a period of even a month or more, we begin to see significant changes in the children's overall health. Children become excited to come to school andare much more attentive thus an ability to learn much more. Many paren
ts and/or caregivers have commented to us on numerous occasions about the significant energy increases that they have seen in these children.
